Ready for Christmas

Yes, I realize being "ready for Christmas" two days after christmas is probably a little late. The holiday season was a little busy for me, what with vacation from my real job, and minimal cupcake orders; I just couldn't find the time to get on here (AKA, my bed and I had much needed relaxation time for eight days, with a little friends and family time).

Before Christmas, I had the opportunity to put together some Christmas Cupcakes for a special order...

Cookie Monster

Is that's not the best looking frosting you've ever seen? Monster cookie dough frosting is a simple delight, topping the Cookie Monster cupcake.

The Cookie Monster is a peanut butter and chocolate chip cake topped with a big scoop of monster cookie dough frosting...made with peanut butter, chocolate chips, m&m's and oats to give it texture, you can't say no to these cupcakes! They were our best and fastest seller at the RCS Christmas bazaar!

Who's Ready?

We're almost there! The cupcakes are busy incubating in my oven, and will be birthed soon! After  frosting and decorating, and they will be ready for consumption!! I'm so excited to showcase our winter seasonal cupcakes at the Rome Catholic School Christmas Bazaar this weekend! In a few short hours, I will be getting my table set up, and early tomorrow morning, the final touches will be put on our delicious little guys for your enjoyment...See you there!!

Fall Cupcake Failure

I'm sure you're all still wondering what has happened to the great Fall Cupcake Challenge of 2012.....

I have been defeated!

I will be honest, 20 cupcakes in 3 months would have been easy, but when you're trying to make them after you've worked 40 hours a week, things become a little more difficult. Then add in three weeks of spending all waking and non-working hours trying to nurse your 16 year old cat to health, putting him down, planning parties and craft fair vendor events, and praying that you aren't one of the ones being laid off come November...sadly, there just isn't always time to actually hop in the kitchen and bake.

I am happy to say that I was able to make 5 of the 20 different cupcakes, and I think that is quite the accomplishment, considering all that was still going on in my life. 20 flavors of cupcakes was the goal, so I completed 25% of the challenge. I think this kept things fresh! Trying new flavors, and I would love to try new cupcakes to see what we are able to add to the ever growing Kate's KupCakes flavor listings. Next year, I already have a list of 15 new cupcake flavors to try for the fall season, and I'm already excited to see what other flavors we can come up with to enjoy!


Good Morning, Cupcake

Ever thought of a pancake making for a wonderful cupcake? Neither did I...but these sweet treats were very popular once made!


The "Good Morning, Cupcake" is a delicious maple pancake cupcake with maple frosting. And shown here, they are missing their candied bacon garnish, but that is what makes the cupcake so delicious! Who could say no to bacon?!


This cupcake is the perfect sweet start to your morning!

Cranberry-Pumpkin Spice Cupcakes

My first ever cupcakes made with fresh pumpkin puree were a huge hit! The Cranberry-Pumpkin Spice Cupcake isn't on our current cupcake list, but once a name has been decided, there is no way we could say no to these delicious little guys!


Cranberry-Pumpkin Spice Cupcakes are a delicious pumpkin and fresh cranberry cake, topped with a wonderful orange cream cheese frosting. The frosting alone was to die for, and fresh cranberries in the cake made it a real treat!


We would love to be able to provide Cranberry-Pumpkin Spice Cupcakes as a seasonal item each year, but these beautiful cupcakes need a name. Comment today and give your input! There is no greater honor than naming one of Kate's KupCakes!

Apple Of My Pie

Looking for a special fall treat for you and your family? I made these for a party over a month ago, and I keep getting compliments that they are the best cupcakes anyone ever tried!

The "Apple of my Pie" cupcake is a traditional vanilla cupcake, filled with delicious cinnamon-apples and "topped" with a fluffy cinnamon buttercream frosting. Apple lovers won't be able to have just one or two...three might not even be enough!



These were one of my favorites to make from the "Fall Cupcake Challenge," and I was even happier to see the smiling faces, and the to-go containers filled with the yummy treats!

Creative Cupcake Naming

This has been one fun and exciting week! I have decided, while planning for our big December vendor event (Rome Catholic School Christmas Bazaar December 1st & 2nd), I have also decided to take on the re-vamping of our cake menu and start getting prepped to have printed menus. It came to my attention, that having a set menu of flavors, instead of allowing so much customization and confusion for orders, would be easier on the customer. So then it was time for creative thinking...and research! I could not believe most of the names I saw out there, but it's been making me so eager to make up my own names for different flavor combinations! So, when you see new names and new ideas floating around here, don't be scared - change is not such a bad thing! Maybe you want to provide some assistance also! Holiday Bazaar and Gluten Free

There's nothing more exciting than the holidays, right? Well maybe a new venture is just as exciting. I'm happy to announce that the Rome Catholic School Christmas Bazaar is coming back this year, and yours truly has reserved a vendor booth for cupcakes and treats!! I am very excited for the new business opportunity this has given me, and can't wait to impress the locals so I can expand!

And speaking of expansion...I've been doing my research, and since Gluten-Free diets have become so common, Kate's Cakes plans to offer new gluten free cupcakes and treats within the next few months!

The First Cupcakes of Fall & Learning from Failure

Who's been looking forward to seeing the Fall-Inspired cupcakes of the 2012 Fall Cupcake Challenge? Don't lie - I know you want a sneak peek of some of my kitchen's most recent creations!

The Apple Cider Cupcakes...


A delicious cinnamon-apple flavored cake, with the moisture and flavor of apple cider that bursts in your mouth, and a wonderful caramel glaze to top this perfect fall treat! (Ok, I will admit that the caramel glaze was supposed to be a frosting, but it didn't form into anything "frosting-like" and I had to settle for the glaze, which, I was told "is a keeper," but I still believe needs a little work. Maybe we'll have a glaze versus frosting taste off to decide what the best topping would be for this cake)



The cake most of you only dreamt about...


You've got that right! That is a delicious red candy atop some apple filled mini-cupcakes. Your favorite fall treat from childhood just became a cupcake - ON A STICK! 


Now, the cake featured in this picture wasn't the best choice for the beautiful candy topping, but with new recipes comes new experiences and definitely learning opportunities. The good news - candy topping on a cupcake may be the new wave of the future - as long as you pick the right cake flavor.

This fall has been a bounty of learning opportunities for Kate's Cakes. From the formation of frosting, to the sinking of a candy topping if you regret to put your cupcakes in the refrigerator overnight, I have learned many things to continue bringing high quality product to my friends and customers. Admitting defeat is the first opportunity to learn and grow from it - and I admit, my first two cupcakes of the challenge were not my best, but there's 18 more flavors to come! 

Two Full-Time Jobs

Keeping up with cupcaking and having a full-time job is like trying to work two full-time jobs - let the exhaustion commence! In stressing over the 2012 Fall Cupcake Challenge, I have managed to bake only 2 of 20 flavors, and then got a wonderful head cold the Friday before a three-day weekend opportunity to bake. In the hopes that the cupcake challenge will not become a cupcake fail, I have been baking cupcakes in my sleep. I guess that doesn't count, since no one will get to try them though.

It is now that I vow to stop being lazy about my cupcake challenge, and about trying new flavors and new recipes for cupcakes. Well, "now" being the moment that this cold stops getting worse and starts getting better, because no one wants to taste cupcakes when a girl is offering them while snot is pouring out of her nose. Truth? Truth.

To defeating discouragement!

Challenge Accepted.

On Monday, May 28, a challenge was accepted; a cupcake challenge: to bake and frost 156 cupcakes for a local school district, and to complete said challenge (delivery included) in one week. The journey, though short, was meddled with bumps along the way. However, one brave girl reigns victorious, as the challenge to bake these cupcakes has been completed, with an extra 22 cupcakes in tow! The delivery of these cupcakes was also successful, arriving in the hands of some very satisfied customers.



A big thanks goes out to everyone out there who supported me in this endeavor. It was short and stressful, and I think we all made it through by the skin of our teeth, but we reign supreme. I also can't thank the Holland Patent School District enough for choosing me to bake these cupcakes for the faculty. I've already received praise, and I look forward to hearing more. You are making a young girl's dreams come true, and my thanks aren't even enough.

There's Nothing Quite Like That First Phone Call

When you're just beginning your first business venture, there truly is nothing like that first phone call. An inquiry about what you can do for a customer; an order. And let me tell you - there's truly nothing like it, when the call is coming in for 150 CUPCAKES IN A WEEK! Now, don't get me wrong, I couldn't have been more excited to get my first opportunity to reel in a client (that wasn't family, friends, or co-workers, because they want me to bring them goodies on a daily basis), but after the initial excitement calms down, there is so much left to plan. I guess I hadn't realized that I was a little more ill-prepared than I had thought. How much do I charge? Can I get it all done in a week? Where do I store 150 cupcakes? How to I travel with 150 cupcakes? - Let's just say, I had a lot on my mind that first night while I was trying to figure out how much this was going to cost, financially, mentally, and physically. Truth be told, I was still excited. I knew that no matter how hard I had to push myself, I would make this happen. And I couldn't be more grateful for the friends and family that stand beside me today. This call came in  and I had the support of the world beneath me, ready to carry me to the finish line, as if I had just broken both of my legs. I was offered help to buy boxes, and help to bake, and help with pricing. I may have found that I have a gift with my knack for baking, and I love it dearly, but I have a true gift - the best friends, family and co-workers that I could ever ask for. i just hope when I "make it big" I'll still have the time to thank them every day for all that they have already done for me - and I haven't even started baking yet!
Did I forget to mention that the cupcakes are due to be delivered on Monday, June 4th...Yes, you heard right, I still have to get my butt out of this chair, get in the kitchen, bake AND FROST (don't forget about the best part of a cupcake - the frosting) 150 cupcakes. I believe I also forgot that I'm making 6 different kinds of cake, and 5 different kinds of frosting. And then when I've made today's cupcakes, I need to find room in my refrigerator to store them, and tomorrow, once they're all frosted, it's going to be even harder to have enough room in the fridge...guess I ought to start re-organizing and get thinking!
Don't you worry - you will hear back from this little girl who started from nothing and somehow finished baking 150 cupcakes and delivered them to a very satisfied customer. This story is not over yet!

A Party is Nothing Without CUPCAKES!

I recently provided many mini cupcakes for a Pampered Chef party, and what a brilliant success! Mini cupcakes are perfect for so many occasions. They allow your guests to eat one cupcake, if they're not too hungry, or lots, if they want to try a little of each tasty flavor available! Here are the flavors I made:

The Start of Something Delicious

May 2012: it's time to bring a dream to life.


Kate's Cakes is beginning as a small, home-grown business, with the hopes of making it big someday. I am Kate, and these are my cupcake creations. For a long time, I have hoped to make my dreams come true, and now is the time nothing can hold me back again. 


Once college was over, I came to the realization that I wanted to do something for myself, something big. I wanted to open my own business. By the summer of 2011, I was spending so much time in the kitchen, that it became abundantly clear that I had found the home of all my future creations - my future business. After receiving much praise from every individual who tried my treats, and ran for a second taste, I decided it was time to make something of this gift, and bring my treats to the world.

I am eager to give you some of the best cakes and sweet treats I have had the pleasure to bake with high quality ingredients, and a little bit of love in every single bite.
